New drywall gets hung on the studs, taped at every joint, then built up with two or three coats of mud that feather out wider each time so the seam disappears into the wall. Patch work follows the same logic on a smaller scale, cutting out the damaged section, fitting in new material, taping the edges, and mudding it out in coats rather than one thick pass.
Bad drywall work shows up later, not on the day it was done. Mud applied too thick without feathering leaves a raised ridge that catches light once paint goes on. Tape that was not embedded properly bubbles and cracks within a year. Water damage patched without finding the leak first just means the same stain, or worse, soft drywall, comes back.
